for Highlands 6th annual Culinary Weekend
with Farm-to-Table Chef Johannes Klapdohr and Local Providers
(Highlands, NC) Old Edwards Inn and Spa presents a Farm Harvest Celebration and Barn Dance as part of Highlands 6th Annual Culinary weekend on Friday, November 9, 2012. Upon arrival guests will be passed a Tupelo Honey and Elderberry Champagne Cocktail as they experience food and spirits from the area’s local farmers and culinary artists including Sunburst Trout Farm, Barker’s Creek Mill, Dave Taylor Farm, and Madison’s Organic Kitchen Garden. Specialty selected wine pairings and craft beer will be offered to guests throughout the evening.
Guests will be immersed in the sights, sounds, smells and flavors of farm-fresh bounty being prepared throughout the Barn Pavilion. It is a setting where people can meet the farmers that grow and produce their food, and indulge in delicious recipes specially prepared on the premises by Madison’s culinary team. To fully bring on the mountain culture, country band Back Porch Orchestra will get the feet stomping for the barn dance. Chef Johannes Klapdohr says, “It is always my goal to put people more in touch with ‘real food’ to help them appreciate where it comes from and how delicious it can taste. Sharing food, especially at harvest time, is something that comes from our very roots. There is no other setting like The Farm, where we produce most of our organically grown food for Madison’s menu, to bring the community and local farmers together to experience this very natural form of dining and celebration.”
The Farm Harvest menu will include fennel pollen-seared fillet of trout, sautéed shrimp and andouille sausage with heirloom grits, beef tenderloin roasted over lavender straw with carolina black truffle Jus, slow-rendered muscovy duck breast on cranberry biscuits and much more.
It's a fun, down-on-the-farm festival of the senses and celebration of the harvest. Also, join us at Madison’s Restaurant on Saturday, November 10 for regular dinner service as well as a special Chef’s Tasting Menu..
